This taco pie is a nostalgic favorite that I hadn’t made in years, so I brought it back for dinner and it was an instant hit. It’s simple to prepare, satisfying, and a great way to feed the family without a lot of fuss.

How to Make Impossibly Easy Taco Pie

This recipe is based on the classic Bisquick “impossible” casserole concept, with a personal twist. Begin by browning ground beef with onion, then stir in taco seasoning and salsa and let the mixture simmer briefly. Spread the seasoned beef in a greased pie plate and top with part of the shredded cheese. Whisk together Bisquick, milk and eggs until smooth, pour the batter over the meat and bake. When it finishes baking, add the remaining cheese until melted. That’s all there is to it — quick, straightforward and delicious.

What to Serve with Impossible Taco Pie

This casserole is similar to a taco quiche and pairs beautifully with fresh toppings. We like to add shredded lettuce, diced tomato and sliced jalapeños for crunch and brightness. It goes well with Mexican-style sides like a chopped salad, a cheesy rice bake, or a black bean and corn casserole.

Impossibly Easy Taco Pie

A quick and satisfying Bisquick taco pie with seasoned ground beef, salsa and cheddar. Ready in about 30 minutes and serves six.

Equipment

  • Pie plate
  • 12-inch nonstick skillet
  • Mixing bowls

Ingredients

  • 1 pound ground beef
  • 1 Tbsp minced onion flakes
  • 1 (1-oz) package taco seasoning
  • 3/4 cup salsa
  • 1/2 cup Bisquick
  • 1 cup milk
  • 2 large eggs
  • 1 cup shredded cheddar cheese

Instructions

  • Preheat oven to 400ºF. Grease a 9-inch deep-dish pie plate.
  • Cook beef and onion in a skillet until the beef is browned; drain any excess fat. Stir in taco seasoning and salsa, then spread the mixture evenly in the prepared pie plate.
  • Top the meat with 1/2 cup of the shredded cheese. In a bowl, whisk together Bisquick, milk and eggs until smooth, then pour the batter over the meat and cheese.
  • Bake about 25 minutes, then sprinkle with the remaining cheese.
  • Bake an additional 3–5 minutes until the cheese melts. Let rest briefly, then serve with your favorite taco toppings.

Notes

You can substitute ground turkey for ground beef if you prefer.

Any shredded cheese works well in place of cheddar.
