Spicy Chilli Cheese Toast Recipe for Quick Savory Snacks

These chilli cheese toasts are quick to assemble and make an ideal snack or appetizer. They’re simple to prepare in large batches and are especially popular with kids.

I’ve enjoyed chilli cheese toast since childhood. It’s a straightforward recipe that older children can help make (younger kids should be supervised).

I fondly remember my mum making these in our new OTG while we waited to dig in. They’re filling and full of cheesy goodness.

Use any bread you have on hand; for a healthier option choose whole-grain or multigrain bread. You can make these on a skillet, in an air fryer, or in the oven — instructions for each method are included below.

Ingredients

Bread slices: Any bread works — white, multigrain, or artisan. I usually keep the crust, but remove it if preferred.

Cheese: Grated Parmesan or mozzarella is ideal. Processed cheese is fine too. For a dairy-free version, use plant-based cheese.

Chilli: Finely chopped green chillies or jalapeños add heat. Adjust quantity to taste.

Vegetables: Finely chopped green peppers (capsicum) and onions are my go-to for crunch and flavor. You can also use mushrooms or tomatoes, or other veggies that don’t need long cooking.

Spices: Salt and pepper are sufficient. I often add Italian seasoning and chopped garlic. Chilli flakes, dried oregano, or parsley can be used instead.

Variations

Make this vegan by substituting vegan cheese for dairy cheese.

If you prefer less fresh heat, use chilli flakes instead of fresh green chillies.

Swap or add vegetables to suit your taste: boiled corn, chopped tomatoes, olives, or grated carrot all work well.

Tips

  1. Any bread will do — even artisan loaves give great texture.
  2. Don’t skimp on the cheese; Parmesan gives the best flavor, though processed or vegan cheese works too.
  3. Green peppers and onion are my favorite combo, but sliced mushrooms are a tasty alternative.
  4. Perfect as an appetizer or an evening snack.
  5. These are best eaten hot. If you have leftovers, reheat in an air fryer for 2–3 minutes at 180°C (350°F).
  6. Because cheese is salty, you may not need additional salt; taste the mixture before adding more.

Instructions with Pictures

Start with slices of wholewheat or multigrain bread.

In a bowl, combine grated cheese (or vegan cheese), pepper, Italian seasoning, chopped garlic, chopped green chillies or jalapeños, and finely chopped green pepper and onion. Mix well.

Spoon a generous amount of the cheesy mixture onto each bread slice and set aside. If you’re making stove-top toasts, only prepare the slice you’ll toast immediately.

On stove top

Heat a cast iron pan or tawa over low-medium heat.

Lightly brush one side of a bread slice with butter or vegan butter and toast it briefly on the pan.

Flip the slice, top the toasted side with the cheesy mixture, and cover with a transparent lid.

Cook on low flame until the cheese melts. Avoid high heat or overcooking to prevent charring.

Remove and serve hot.

In Air fryer

Preheat the air fryer to 180°C (350°F) for about 4 minutes.

Place the slices with the cheesy topping in the air fryer basket — I fit three slices at once.

Air fry for 4–6 minutes at 180°C (350°F), until the cheese melts, browns slightly, and the bread is toasted. Remove and serve immediately.

In oven

Preheat the oven to 180°C (350°F).

Arrange the slices with the cheesy mixture on a baking tray and bake for 10–12 minutes, until the cheese melts and the bread is toasted.

Remove and enjoy hot.
