Today I’m sharing my husband’s favorite way to prepare chicken — lemon pepper is his go-to seasoning and one that I enjoy as well. I previously made breaded lemon pepper chicken tenders, but wanted to try a simpler preparation. These Lemon Pepper Chicken Tenderloins are quick to assemble and bake, delivering juicy chicken with bright lemon and pepper flavors.

They make a wonderful weeknight dinner and keep well for lunches. I often make extra to slice over salads for an easy, protein-packed meal.

How to make Lemon Pepper Chicken Tenderloins:

  • Place the chicken tenderloins in a large resealable bag or bowl with the oil and lemon juice.
  • Massage the oil and lemon juice into the chicken so it is evenly coated.
  • Add the lemon pepper and remaining seasonings, then massage again to distribute evenly.
  • For best flavor, marinate the chicken for 2–3 hours or overnight in the refrigerator.
  • Preheat the oven to 350°F (175°C).
  • Spray a casserole dish with nonstick spray, arrange the marinated chicken in the dish, and pour any remaining marinade over the top.
  • Bake 20–30 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and is cooked through.

How long to marinate chicken:

The longer you marinate, the deeper the lemon and seasoning will penetrate. If you’re short on time, you can bake immediately and it will still taste great, but I aim for at least 2–3 hours or overnight when possible for best results.

  • 1 tablespoon oil
  • 1 lemon, juiced
  • 2 teaspoons lemon pepper (or to taste)
  • 1 teaspoon dried oregano
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon paprika
