Eventually I realized that lifestyle—five hamburgers a week—was how Charlie always ate.

I flagged many recipes in the Game Day Eats and Take-Out Favorites chapters, but Serena’s at-home rotisserie chicken was the first one I tried. Charlie’s made great progress limiting red meat—he committed to one serving a week in 2016—so rotisserie chicken has become a go-to in our house. He often picks up a whole bird from the market and will happily eat the whole thing.

I assumed another roast chicken would be wasted on him, but Serena’s Magic Faux-Tisserie won him over, especially when served with my gluten-free gravy. The smoked paprika and chili powder in the rub create a sticky, smoky crust, while the long, slow roast keeps the meat exceptionally moist.

We usually top our roast chicken with a favorite sauce, though Serena’s version needs none—the rub and slow cooking deliver plenty of flavor. This faux rotisserie chicken is roasted low and slow in the oven and topped with an addictive mixture of herbs and spices. It’s gluten-free and perfect for a make ahead meal.

I used whole cumin seeds because that’s what I had, and maple sugar. The seasoning would also be delicious on a Thanksgiving turkey. Leftovers are even better the next day.

Ingredients

  • One 3 1/2 to 4 pound whole chicken
  • 5 whole garlic cloves, smashed
  • 1/2 lemon, quartered
  • 2 1/2 teaspoons smoked paprika
  • 2 teaspoon kosher salt
  • 2 teaspoons light brown sugar
  • 1 1/2 teaspoons chili powder
  • 1 teaspoon freshly ground black pepper
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon cumin
  • 3 tablespoons olive oil
  • Kitchen twine

Instructions

  • Preheat the oven to 300 degrees F.
  • Remove the giblets from the cavity, rinse the chicken, and pat it dry. Stuff the cavity with smashed garlic cloves and lemon quarters.
  • In a small bowl, combine smoked paprika, kosher salt, light brown sugar, chili powder, black pepper, garlic powder, and cumin. Gently loosen the skin over the breast and rub 1 tablespoon olive oil and 1 teaspoon of the spice mixture under the skin. Rub the remaining 2 tablespoons olive oil on the skin and season the entire bird with the remaining spices. Tie the legs together with kitchen twine and place the bird breast-side up in an ovenproof skillet or on a baking sheet.
  • Roast for 2 hours 45 minutes to 3 hours, basting at about 1 1/2 and 2 1/2 hours by spooning pan juices over the bird, until the meat is tender and the skin is deep brown. A few blackened spots are fine and add flavor.
  • Let the chicken rest for 10 minutes before carving and serving.
