Strawberry Short Cake Kabobs

This fun, simple dessert is ideal for family nights, potlucks, or parties. It’s quick to assemble, travels well, and looks lovely on a platter. Use firm, ripe fruit—strawberries are a classic choice and were the inspiration here.

You can use pound cake, angel food cake, or even brownies if you prefer chocolate. Pound cake works especially well because it holds its shape when cubed. For the drizzle, white chocolate is my favorite, but milk or dark chocolate are great alternatives. Sprinkles add a festive touch. This is a wonderful activity to get kids and teens involved—assembly is easy and they always enjoy the outcome.

This recipe scales nicely. Assemble the kabobs in the morning and refrigerate until serving. For a small batch, one pound cake and one pound of strawberries yield about 18 kabobs.

This light, delicious dessert can be made up to 8 hours in advance.

Ingredients (18 Kabobs)

  • 1 pound cake
  • 1 pound strawberries (about 18 strawberries)
  • 18 wooden skewers
  • 1 cup white chocolate chips (about 6 ounces)

Instructions

  1. Remove the stems from the strawberries. Slice each strawberry into three uniform sections across the middle.
  2. Cut the pound cake in half lengthwise, then cut each half into thirds lengthwise. Slice each section into 6 cubes, producing about 36 cubes from one cake.
  3. Arrange on your work surface: strawberry slice, cake cube, strawberry slice, cake cube, strawberry slice.
  4. Skewer the assembled pieces through the center to create each kabob.
  5. In a microwave-safe bowl, melt the white chocolate chips in the microwave for about two minutes, stirring every 30 seconds until smooth.
  6. Transfer the melted chocolate to a plastic bag, snip a small corner, and drizzle over the kabobs.
  7. Refrigerate the kabobs at least 10 minutes to set the chocolate before serving.

  • 3 pound cakes (48 ounces total)
  • 3 pounds strawberries (~18 strawberries per pound)
  • 54 wooden skewers
  • 11 ounce bag white chocolate chips

Instructions

  1. Remove stems and slice strawberries into three uniform sections.
  2. Cut each pound cake in half lengthwise, then into thirds lengthwise. Cut each section into 6 cubes (36 cubes per cake).
  3. Assemble each kabob with strawberry, cake, strawberry, cake, strawberry, then skewer through the center.
  4. Melt chocolate in a microwave-safe bowl, stirring every 30 seconds until smooth.
  5. Place melted chocolate in a bag, cut a small corner, drizzle over kabobs, and refrigerate at least 10 minutes to set.

Notes

Rule of thumb: 1 pound of strawberries per pound cake. One pound cake yields 36 cake cubes, which makes about 18 kabobs. You can substitute angel food cake if preferred.
