For a simple, satisfying weeknight dinner, try this Smoked Sausage Potato Bake—an easy one-pan meal that’s comforting and full of flavor.

One of the easiest ways I keep dinner stress-free is to stock smoked sausage in the fridge. It keeps for weeks unopened and doesn’t require the advance thawing that many cuts of meat do. That makes this sausage potato bake a reliable go-to when I haven’t planned ahead.

This dish combines smoked sausage, potatoes, onions and peppers tossed with olive oil and seasonings, then roasted until the potatoes are tender and the sausage is browned. It’s a complete, hearty meal that suits families, potlucks, or anyone who wants an easy cleanup.

The peppers and onions add sweetness and depth that balance the savory smoked sausage. I prefer red peppers for color and flavor, but green peppers work just as well if that’s what you have.
I usually scrub the potatoes and leave the skins on for extra fiber and texture, though peeled potatoes are fine if you prefer them that way. Either option makes a comforting, flavorful bake.

How to make Sausage Potato Bake
Ingredients:
- smoked sausage (12 oz package)
- russet potatoes (about 5, peeled or scrubbed and cubed)
- 1 onion, diced
- 1 red pepper, diced
- 1 Tbsp olive oil
- 2 cloves garlic, minced
- ½ tsp salt
- ½ tsp black pepper
- ½ tsp paprika
Cut the smoked sausage into 1/2″ chunks. Scrub or peel the potatoes and cut them into 1″ cubes. Place the sausage, potatoes, diced onion, diced pepper, olive oil, garlic, salt, pepper, and paprika into a large bowl. Toss well so all pieces are evenly coated.
Transfer the mixture to a 9×13″ baking pan sprayed with non-stick spray. Roast in a 400°F oven for about 45 minutes, stirring every 15 minutes so the potatoes cook evenly and the sausage browns on all sides. The dish is done when the potatoes are tender and golden and the sausage is heated through.

Variations and tips
- Swap in smoked chicken sausage or turkey sausage for a leaner option.
- Add extra vegetables such as zucchini, carrots, or mushrooms for more variety.
- For crispier potatoes, spread the mixture in a single layer and avoid overcrowding the pan.
- Season to taste—add smoked paprika, cayenne, or Italian seasoning to change the flavor profile.
- Leftovers reheat well in the oven or a skillet and make great lunches.
