How to Make a Lemon Poke Cake in a Slow Cooker
Aunt Lou here — I’ve always loved lemon desserts: cake, bars, puddings — everything. I also grew up loving poke cakes and even turned a cream soda poke cake into a crock pot version. Combining lemon with a poke cake felt like a perfect match, and it really is. If you enjoy lemon, this will quickly become a favorite.

Ingredients
- 1 white cake mix , prepared
- 12 oz can lemon-lime soda
- small package lemon jello
- 1 tub frozen whipped topping , thawed
- 1 small box instant lemon pudding
Instructions
- Lightly spray a 6-quart slow cooker with cooking spray.
- Pour the prepared cake mix into the slow cooker.
- Place 3–4 paper towels under the lid, cover, and cook on high for 1–2 hours.
- When a toothpick inserted into the center comes out clean, remove the inner crock and let the cake cool.
- Once cooled, poke holes across the top of the cake with a toothpick.
- Stir the lemon-lime soda and lemon jello together until dissolved.
- Pour the jello mixture evenly over the cake so the liquid settles into the holes.
- In a separate bowl, fold the thawed whipped topping together with the instant lemon pudding mix.
- Spread the whipped topping/pudding mixture evenly over the cake. Chill or serve as desired.
Notes
- Serve warm or chilled. Chilling intensifies the lemon flavor and makes the texture creamier.
- Perfect for gatherings — it’s easy to make and easy to transport.

- Nutrition estimates are approximate and depend on the exact ingredients you choose.
