Beef patties
These monster burgers start with homemade beef patties, but you can use store-bought patties if you prefer. Patties made from beef, chicken, pork or plant-based alternatives all work well. Cook them on a grill, in the oven, or on the stovetop.
The simple homemade mix here uses ground beef seasoned with salt, black pepper, dried thyme, an egg and a little breadcrumbs. Mixing thoroughly ensures the seasoning is evenly distributed—use gloves or a fork to combine the ingredients without overworking the meat.
This recipe yields four patties. Increase quantities if you need more for a larger crowd.

Assembling Halloween monster burgers
Prepare your components first: make the mayo-ketchup sauce, wash and pat dry lettuce (unless it’s pre-washed), and cook the patties. Once everything is ready, assemble the burgers.

Tips for making burger monsters for Halloween
- Vegetarians can swap in veggie burger patties instead of meat.
- Get creative with the eyes: instead of toothpicks you can place sliced cherry tomatoes, olives, or cucumber rounds directly on top of each bun.
- Use any sliced cheese you like—cheddar, Gouda or mozzarella all work well.
- For a quick sauce, mix mayonnaise with ketchup; add crushed garlic or hot sauce for extra flavor.
- Baby romaine lettuce is a great choice but any leaf lettuce will do.
- Toast or grill the burger buns for extra texture and flavor.

Halloween Monster Burgers
Ingredients
For homemade burger patties: see note 1
- 1 pound ground beef (450 grams)
- ½ teaspoon salt
- ⅛ teaspoon black pepper
- 2 teaspoons dried thyme
- 1 egg (large)
- 2 tablespoons breadcrumbs
For frying:
- 4 tablespoons cooking oil
For mayo sauce:
- 4 tablespoons mayonnaise
- 4 teaspoons ketchup
For burger monsters:
- 4 hamburger buns , see note 2
- baby romaine lettuce (2 leaves per bun)
- 4 cheese slices, see note 3
- 4 tablespoons ketchup (or to liking)
- dill pickles , sliced lengthways (4 slices)
- 8 green olives (large – pitted)
Instructions
-
Making burger patties: In a mixing bowl, combine ground beef, salt, pepper, thyme, egg and breadcrumbs. Mix thoroughly by hand or with a fork so the seasoning distributes evenly.
-
Divide the mixture into four equal portions. Roll each portion into a ball, place on a tray lined with parchment and press into large, thin patties. Make a slight dent in the center of each patty to prevent puffing while cooking.
-
Heat cooking oil in a large skillet and cook the patties until they reach your preferred doneness, about 3–4 minutes per side for medium (see note 4 for temperature guidance). Grilling or oven-baking are good alternatives.
-
Mayo sauce: Whisk together mayonnaise and ketchup in a small bowl. Adjust proportions to taste and add garlic or hot sauce if desired.
-
Assembling monster burgers: Spread about a tablespoon of mayo sauce on the bottom bun, add lettuce, then the cooked patty.

-
Place a dill pickle slice on the patty and top with a cheese slice that has small triangles cut from one edge to resemble teeth. Spread a tablespoon of ketchup over the cheese to simulate “blood,” then position the top bun.

-
Thread two large pitted green olives onto toothpicks and insert them into the top bun to create monster eyes.

-
Serve and enjoy.
Notes
- Each patty is roughly ¼ pound. Use store-bought patties if you prefer to skip making them from scratch.
- Large sesame buns were used here, but any bun size or type works. Toast or grill buns if you like.
- Any sliced cheese is suitable—Gouda, mozzarella or cheddar are good options.
- Cook patties until the internal temperature reaches 160°F (71°C) for well-done; adjust cooking time as needed.
- This recipe scales easily—double or triple for a larger crowd.
- Remove toothpicks before serving to young children for safety.
