Whole Grain Burger Buns: Soft, Nutritious Recipe for Homemade Bread

We adore these small burger buns. For this recipe we made mini buns, but you can shape them into regular-sized buns if you prefer.

This recipe was originally developed to accompany our pulled pork burgers. Recently we used the same buns for boeuf bourguignon burgers. A homemade, slow-cooked burger is far superior to the fast-food variety, and these buns complement rich fillings perfectly. Made with wholewheat and topped with sesame and poppy seeds, they’re tasty and nutritious.

Description

Learn how to make these flavorful wholewheat buns topped with sesame and poppy seeds. They’re sturdy enough for meaty burgers yet tender and slightly sweet — perfect for homemade sandwiches.


Ingredients

  • 250 g flour (150 g wholewheat + 100 g plain)
  • 1 tsp dried yeast
  • 1 tbsp caster sugar
  • 1 tsp salt
  • 50 ml water
  • 15 g butter, cut into small pieces (~3 g each)
  • 70 ml milk
  • 1 egg
  • 5 ml milk for glazing
  • A generous handful of sesame seeds
  • A generous handful of poppy seeds

Instructions

  1. Combine the flours, dried yeast, sugar and salt in a bowl.
  2. Warm the water and milk to about 40–50°C (104–122°F).
  3. Add the warm liquids to the dry ingredients and mix in a stand mixer using the dough hook.
  4. Beat in the egg and continue to mix until the dough starts to come together into a ball.
  5. Gradually add the butter pieces, mixing in between, until fully incorporated.
  6. Cover the bowl and let the dough rise in a warm place for at least one hour.
  7. The dough should double in size.
  8. Preheat the oven to 180°C (360°F).
  9. Divide the dough into four equal balls for regular buns.
  10. Brush with milk and sprinkle with sesame and poppy seeds.
  11. Bake until lightly browned on top, about 14–18 minutes for regular buns.
  12. For mini burgers, divide the dough into ten smaller balls and bake for about 10 minutes.

Notes

This basic dough is versatile. You can add dried fruits and nuts such as figs, raisins, apricots or walnuts for a different flavor profile.
