This recipe is intentionally simple: just three ingredients and a food processor. Active prep takes only about five minutes. You do need to allow time for soaking the nuts and for the bars to set in the freezer, but the results are worth the wait.
Raw treats are among the easiest snacks to make. They’re nutritious, convenient, and keep well in the fridge or freezer. I always keep both well stocked.
For best results, soak the hazelnuts first. Soaking helps break down enzyme inhibitors, making nuts easier to digest and their nutrients easier to absorb. It can also soften the nuts, which helps them process into a smooth mixture. To soak, cover the nuts with warm water and a pinch of salt and leave them for several hours or overnight. Drain and dry them with a clean towel, or if you prefer, use a dehydrator or a low oven to remove moisture. In this recipe I towel-dried the nuts and stored the finished bars in the freezer to prevent spoilage. (Baking would remove the raw quality.)
Note: I have a mild sensitivity to raw nuts, so even soaked nuts can make my lips tingle or my throat feel tight if I eat too many. Take care if you have any nut sensitivities.
My raw food challenge is nearly complete, but I’ll continue sharing raw recipes for anyone who follows that way of eating. I’m also planning to return to more cooked vegan dishes next week, so expect a mix of both styles — the best of both worlds.

Ingredients
- 1 cup raw hazelnuts
- 3 tbsp cacao powder
- 1/2 cup soft dates

Soak the hazelnuts for about 7 hours or overnight, then drain and dry them. Add the nuts to a food processor and pulse a few times. Add the soft dates and cacao powder, then process until the mixture comes together in a sticky, uniform mass. Transfer the mixture to parchment paper and press into a rectangle. If desired, sprinkle with crushed hazelnuts before setting.

Place the pressed mixture in the freezer until firm, then cut into bars. Store chilled or frozen. Enjoy!
