Cucumber Mint Gin Fizz with Lime Refreshment

You’ll love this crisp gin cocktail made with lime-flavored sparkling water, a squeeze of fresh lime, cool cucumber, and fragrant mint.

When the North Carolina summer heats up, I want something light, effervescent, and clean on the palate. Heavy beers just don’t do it for me on a sweltering day — give me something bright and fizzy instead. This Cooling Cucumber Mint Gin Fizz delivers exactly that: brisk bubbles, a hint of lime, fresh cucumber, and cooling mint.

Last summer I shared a Blueberry Lemon Vodka Fizz that I still daydream about, but this cucumber-and-mint version has become a new favorite. It’s genuinely cooling — the kind of drink that refreshes you while you’re flipping burgers on the grill or pulling weeds in the garden. If you grow cucumbers and mint at home, you can literally bring your garden to the glass.

Cooling Cucumber Mint Gin Fizz.

This cocktail is low in calories and not sweet — perfect if you dislike sugary mixed drinks. I tend to keep my drinks simple: a light spirit, sparkling water, a splash of citrus, and fresh herbs when I’m feeling fancy. I even added a dash or two of bitters in this recipe for a slightly more complex note, but that’s optional.

I admire the bourbon trend, but my tastes lean toward refreshing, easy-on-the-stomach drinks — especially in the heat.

Cooling Cucumber Mint Gin Fizz

A refreshing gin cocktail made with lime sparkling water, a splash of lime, cucumber, and fresh mint.
Prep Time: 5 minutes
Total Time: 5 minutes
Servings: 1 drink

Ingredients 

  • 1.5 oz good quality gin
  • 4-6 oz lime-flavored sparkling water
  • 1/2 tsp freshly-squeezed lime juice
  • 3-4 cucumber slices or cucumber ribbons
  • 4-6 fresh mint leaves, rinsed and patted dry
  • 1-2 splashes of bitters (optional)
  • Lime wedges, for garnish, You can also garnish with extra cucumber and mint, if you’d like
  • A handful of ice

Instructions 

  • Fill a glass with a handful of ice. Tuck cucumber slices and mint leaves in and around the ice. Add the lime juice, then top with lime-flavored sparkling water. If you like, add 1–2 dashes of bitters.

    Gently stir with a straw or stir stick to combine flavors. Garnish with a lime wedge and enjoy — add an extra spritz of fresh lime if you prefer a brighter finish.
