Apple Coffee Cake in the Crock Pot

Ingredients

  • 2 cups biscuit mix
  • 2/3 cup applesauce
  • ¼ cup milk
  • 2 tablespoons sugar
  • 2 tablespoons butter or margarine softened
  • 2 apples peeled, cored and diced
  • 1 teaspoon cinnamon
  • 1 teaspoon vanilla
  • 1 egg lightly beaten

Streusel Topping

  • ¼ cup biscuit mix
  • ¼ cup brown sugar
  • 2 tablespoons firm butter or margarine
  • 1 teaspoon cinnamon
  • ¼ cup nuts chopped (optional)

Instructions

  • In a large bowl, combine the biscuit mix, applesauce, milk, sugar, softened butter or margarine, diced apples, cinnamon, vanilla and the lightly beaten egg. Stir until just combined.
  • Spread the batter in a lightly greased 3½‑quart crock pot. If your crock pot is larger, use a baking dish that fits inside and grease it lightly before adding the batter.
  • Make the streusel by mixing the biscuit mix, brown sugar, firm butter or margarine, cinnamon and optional chopped nuts with a fork or pastry blender until crumbly. Sprinkle evenly over the batter.
  • Cover and cook on High for about 2½ hours, or until a toothpick inserted in the center comes out clean. Cooking times may vary slightly depending on your crock pot.

Notes

Gluten free: Use a gluten-free biscuit mix or other gluten-free flour blend. Dairy free: Substitute your preferred non-dairy milk and use non-dairy margarine.
