This stew was born of necessity. The theme for the teachers’ meal was Mediterranean, and while many parents signed up for appetizers and desserts, the main dish slots were thin. I own multiple slow cookers for moments like this: I added my name to the list and adapted a classic beef stew into a Mediterranean-style slow-cooker dish that took about 10 minutes to assemble.
Slow cooker soups and stews are a favorite at my house. They’re easy, forgiving, and the house smells amazing when you return home after a busy day. If you can chop an onion, you can make this stew—the rest is mostly dumping ingredients from jars, cans, and packages into the slow cooker and letting time do the work. It’s ideal for nights when schedules run late with school pick-ups, lessons, and practices.

The balsamic vinegar adds a pleasant acidity and depth to the broth while olives and capers contribute a briny contrast that makes the whole dish sing. Garnishing each bowl with parsley and Parmesan brightens the flavors and adds a savory finishing touch—so effective that even my picky seven-year-old, who usually protests mushrooms and olives, happily served herself and enjoyed it.

Slow Cooker Mediterranean Beef Stew
Ingredients
- 3 pounds beef stew meat
- 16 ounces sliced baby portabello or crimini mushrooms
- 1 large onion chopped
- 10 garlic cloves minced
- 2 tablespoons dried rosemary
- 2 cups beef broth
- 2 14.5- ounce cans diced tomatoes drained
- 1 15- ounce can tomato sauce
- 1/2 cup balsamic vinegar
- 1 6- ounce can black olives drained
- 1 2- ounce jar capers drained
- grated Parmesan cheese and chopped fresh parsley to garnish
Instructions

In a six-quart slow cooker, add all ingredients except the garnishes and stir gently to combine.

Cook on LOW for 8–10 hours, until the beef is tender.

Season with salt and pepper to taste.
