Broccoli and Feta Pasta Sauce Recipe (2 Smart WW Points)

Ingredients

Servings: 4 servings
  • 16 oz package of broccoli florets
  • 5 oz fat free feta cheese
  • 2 tbsp light butter
  • 1 small onion(finely chopped)
  • 3 garlic cloves(minced)
  • 1 tbsp olive oil
  • cup water
  • Juice of 1 lemon
  • Salt and pepper to taste

Instructions

  • Steam the broccoli in a microwave-safe bowl or a vegetable steamer until tender.
  • In a large nonstick skillet, melt the light butter over medium-high heat. Add the finely chopped onion and minced garlic and sauté for 3–4 minutes, until the onion softens and becomes translucent.
  • Transfer the cooked onion and garlic to a blender. Add the steamed broccoli, feta, olive oil, lemon juice, water, and salt and pepper. Puree until smooth, adding more water if the sauce is too thick. Taste and adjust seasoning as needed.

Notes

  • This recipe yields four servings.
  • One serving is roughly 3/4 cup.
