Begin by gently frying the finely chopped onion, leek, diced celery and carrot together with crushed garlic. Cook slowly over medium-low heat until the vegetables are soft and slightly sweet—about 12–15 minutes. This slow cooking stage builds flavour and ensures a silky final texture.
Stir in the plain flour and cook for about a minute while stirring to remove the raw flour taste. Gradually add the vegetable stock, a little at a time, whisking or stirring to avoid lumps. Once the stock is incorporated, add the diced potato, mixed dried herbs and two bay leaves.

Bring the soup to a gentle simmer and cook for about 15 minutes, or until the potatoes are tender when pierced with a fork. Add the frozen sweetcorn, peas and drained chickpeas, then simmer for another 10 minutes so the flavours blend and the frozen veg heats through.

Take the pan off the heat and stir in the vegan cream of your choice. Taste and season with plenty of salt and freshly ground black pepper. How To Store It

Ingredients
- 1 Tbsp olive oil
- 30 g (2 Tbsp) vegan butter or spread
- 1 large onion, finely chopped
- 1 large leek, finely chopped
- 2 sticks celery, diced
- 2 large carrots (about 300g), diced
- 4 cloves garlic, peeled and crushed
- 50 g (⅓ cup + 1 Tbsp) plain (all-purpose) flour
- 1.3 litres (5½ cups) vegetable stock
- 2 large potatoes (about 500g), peeled and diced
- 1 tsp mixed dried herbs
- 2 bay leaves
- 150 g (1 cup) frozen peas
- 150 g (1 cup) frozen sweetcorn
- 1 x 400 g (14 oz) tin chickpeas, drained
- 120 ml (½ cup) vegan cream
- Salt and black pepper, to taste
Instructions
- Heat the olive oil and vegan butter in a large saucepan. Add the onion, leek, celery, carrot and garlic. Cook gently, stirring often, for about 15 minutes until the vegetables are soft.
- Stir in the flour and cook for one minute while stirring to remove the raw taste.
- Gradually add the vegetable stock, a little at a time, stirring to avoid lumps.
- Add the diced potatoes, mixed dried herbs and bay leaves. Bring to a gentle simmer and cook for about 15 minutes, stirring occasionally, until the potatoes are tender.
- Add the peas, sweetcorn and chickpeas. Simmer for 10 more minutes to heat through.
- Remove from the heat, stir in the vegan cream and season generously with salt and black pepper. Adjust thickness by mashing some potatoes or blending a small portion if desired.
