  • 240 ml warm water (40-46°C)
  • 1 sachet dried active yeast (or use fast action/easy bake yeast)
  • 380 grams plain flour
  • 1 tsp mixed herbs
  • 1 tsp white sugar
  • 1 tsp salt
  • 2 tbsp olive oil

  • 6 cloves garlic, minced
  • 70 g unsalted butter, softened to room temperature
  • 6 g flat leaf parsley, finely chopped
  • 10 g Parmigiano Reggiano, finely grated (optional)
  • Mozzarella (optional)

Instructions

Garlic Pizza Bread – Homemade Dough (Prepare at least 2 hours ahead)

  • If using active yeast, add 1 sachet to 240 ml warm water (40-46°C), stir and leave for at least 10 minutes until frothy. If using fast action yeast, add directly with the dry ingredients and mix with the water and oil.

  • In a large bowl, whisk together 380 g plain flour, 1 tsp mixed herbs, 1 tsp sugar and 1 tsp salt.

  • When the yeast mixture is frothy, add it to the dry ingredients along with 2 tbsp olive oil.

  • If using a stand mixer, knead with a dough hook for about 8 minutes. If kneading by hand, mix with a spoon until the dough comes together, then form a ball and knead by hand.

  • Turn the dough onto a floured surface and knead for about 12 minutes until smooth and no longer sticky.

  • Place the dough in a bowl, cover with a damp cloth and leave in a warm draft-free spot to double in size (about 2 hours). Remove butter from the fridge to soften for the garlic butter.

  • For a thin crust, roll the dough out with a rolling pin into a large even circle. For a thicker base, gently stretch by hand with floured palms to form a smaller deep-pan base.

  • Grease a pizza pan or baking tray with oil or butter, place the shaped dough on it and create a slightly thicker 1-inch crust if desired.

  • Preheat the oven to 200°C fan / 220°C / 425°F / Gas Mark 7. In a bowl combine 6 minced garlic cloves, 70 g softened unsalted butter, 6 g chopped parsley and 10 g grated Parmigiano Reggiano, if using.

  • Mix the garlic butter until well combined, then spread it evenly over the pizza base. Leave a 1-inch crust around the edge free of butter. Add extra mozzarella or cheddar if you want a cheesy topping.
