Apple Coffee Cake in the Crock Pot

Ingredients
- 2 cups biscuit mix
- 2/3 cup applesauce
- ¼ cup milk
- 2 tablespoons sugar
- 2 tablespoons butter or margarine softened
- 2 apples peeled, cored and diced
- 1 teaspoon cinnamon
- 1 teaspoon vanilla
- 1 egg lightly beaten
Streusel Topping
- ¼ cup biscuit mix
- ¼ cup brown sugar
- 2 tablespoons firm butter or margarine
- 1 teaspoon cinnamon
- ¼ cup nuts chopped (optional)
Instructions

In a large bowl, combine the biscuit mix, applesauce, milk, sugar, softened butter or margarine, diced apples, cinnamon, vanilla and the lightly beaten egg. Stir until just combined.

Spread the batter in a lightly greased 3½‑quart crock pot. If your crock pot is larger, use a baking dish that fits inside and grease it lightly before adding the batter.

Make the streusel by mixing the biscuit mix, brown sugar, firm butter or margarine, cinnamon and optional chopped nuts with a fork or pastry blender until crumbly. Sprinkle evenly over the batter.

Cover and cook on High for about 2½ hours, or until a toothpick inserted in the center comes out clean. Cooking times may vary slightly depending on your crock pot.
Notes
Gluten free: Use a gluten-free biscuit mix or other gluten-free flour blend. Dairy free: Substitute your preferred non-dairy milk and use non-dairy margarine.
