A few days ago my friend Nat asked me to share this recipe. I had been planning a different dessert for Valentine’s Day, but this request inspired me to publish both ideas. If you live in the southern hemisphere and it’s still warm, ice cream is a perfect choice. And even if you’re somewhere cooler but you love ice cream as much as I do, you must try this Baileys ice cream. It’s surprisingly simple to make and absolutely delicious.
I developed this recipe after buying an ice cream maker attachment for my Kenwood Chef last year, but the best part is that you can make it without an ice cream machine and still get a rich, creamy result. Below is the easy method and ingredient list for a homemade Baileys ice cream — a great dessert for Valentine’s Day or any warm day when you want something indulgent.
Ingredients:
125 g – 2/3 cup granulated sugar
50 ml – 3 1/2 tbsp milk
150 ml – 2/3 cup heavy cream (for whipping)
150 ml – 2/3 cup double cream*
1 egg
75 ml – 5 tbsp Baileys
*You can substitute the double cream with an extra 150 ml of heavy cream if you prefer.
Method:
1. Beat the egg and sugar with an electric mixer until the mixture is pale and slightly thickened.
2. Add the milk, both creams and the Baileys to the egg and sugar mixture.
3. Whisk everything together with the electric mixer until fully combined and smooth.
4. If you have an ice cream machine, pour the mixture into the machine and churn for about 30 minutes until it reaches a soft-serve consistency.
5. Transfer the churned ice cream to a container — an old ice cream tub works well — cover it tightly and freeze overnight to firm up.
Alternative no-machine method:
1. After whisking the ingredients, pour the mixture into a suitable container. Press a sheet of cling film directly onto the surface so it contacts the mixture; this helps prevent ice crystals forming.
2. Cover with the lid and freeze overnight. The next day the ice cream will be set and ready to enjoy.
Serve scoops of Baileys ice cream on its own or alongside crisp biscuits such as Lingue di gatto. It’s a creamy, boozy dessert that’s easy to make and sure to impress.
